Maureen’s Fabulous Chocolate Chip Cookies (@ Christmas add White Chocolate Chips & Craisins for Festive Flair!)
- 4 cup flour
- 2 tsp baking soda
- 5 cups blended oatmeal (put real oats in blender, blend until smooth)
- 1 tsp salt
- 2 tsp baking powder
- 3 tsp instant coffee
- 2 cups butter
- 2 cups sugar
- 2 cups brown sugar
- 4 eggs
- 2 tsp vanilla
These next ingredients can be added in any combinatinon:
- 1 ½ cups nuts (sliced almonds, chopped walnuts, chopped pecans), 24 ounces choco-chips – semi-sweet, milk or dark chocolate, peanut butter chips, caramel chips, heath chips (combine 2 12 ounce bags)
- Cream butter, 2 sugars; beat in eggs and vanilla
- Combine dry ingredients and mix with above mixture creating dough
- Add your combination of nuts/chips/craisins
- Roll into walnut size dough balls
- Bake on greased cookie sheet (Bakers spray preferable) @ 375 for 10-12 minutes
Makes 112 cookies
Russ T Nailz and Chef Larry’s “Pico de Gallo” Guacamole
Ingredients:
- 3 cups Tomatoes, diced
- 1 cup Red Onions, finely diced
- 1 Jalapeno pepper, seeded and finely diced
- 1 1/2 tsp. Garlic, minced
- 1/4 cup Cilantro, chopped
- 1/4 cup Fresh lemon juice
- Salt to taste
- Fresh ground black pepper to taste
- 8 – 10 Ripe avocados, halved and peeled
Prepare “Pico de Gallo” by combining ingredients in a large bowl. Mix thoroughly. Add avocados, mashing gently until all ingredients are well incorporated. Adjust seasoning if necessary. Cover and refrigerate until served.
Hot Hot Hot Sauce
Ingredients:
- 4 Tomatos
- 2 Jalapeno Peppers
- 2 Large White Onions
- 4 Habanera Peppers
- 2 Bunches of Cilantro
- 2 TBSP Lemon Juice
- 1/4 Cup Garlic Salt
- 1 TBSP Ground Pepper
First remove stems and boil the Tomatos, Jalapeno Peppers, Onions and Habanera Peppers until the skin on Tomatos wrinkles up. Then drain water and put Tomato’s, Jalapeno Peppers, Onions and Habanera Peppers into blender. Blend until liquid form. Than add Cilantro, Lemon Juice, Garlic Salt and Ground Pepper into blender. Blend all ingredients until salsa form. Serve warm or cold or however you want. Can marinate with chicken for 4 hours and bake for a spicy chicken recipe.

Fred’s Fabulous Popcorn Recipe
This recipe delivers all the joys and taste of buttered popcorn without the artery clogging butter and cholesterol. One Presto brand, model 04830 PowerPop Microwave Multi-Popper. (A microwave corn popper which you can find at Target and on Amazon)
Put popping corn (yellow or white) into the popper and pop the corn in the microwave according to popper directions. (Be careful to not over-pop and burn the popcorn) Put the popped corn into a bowl and drizzle olive oil on it. Drizzle the olive oil as if it were butter, because the next step will make it taste like butter-but better. Apply ‘Molly McButter” buttered flavored sprinkles and enjoy! Mmmmmmmm.

Londi’s Coconut Gooey Butter Cake
Cake:
- 1 (18.25-ounce) box yellow cake mix
- 1 large egg
- 1/2 cup (1 stick) unsalted butter, melted
Filling:
- 1 (8-ounce) package cream cheese, softened
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1 (16-ounce) box confectioners’ sugar
- 1/2 cup (1 stick) unsalted butter, melted
- 1 ¼ cup flaked coconut (I usually add a little more) Preheat the oven to 350 degrees F. Lightly grease a 13 by 9 by-2-inch baking pan.
For the cake:
In the bowl of an electric mixer, combine the cake mix, egg, and butter and mix well. Pat into the bottom of prepared pan and set aside.
For the filling:
Still using an electric mixer, beat the cream cheese until smooth. Beat in the eggs and vanilla. Dump in confectioners’ sugar and beat well. Reduce the speed and slowly pour in butter. Mix well. Fold in toffee bits.
Pour filling onto cake mixture and spread evenly. Bake for 40 to 50 minutes. Don’t be afraid to make a judgment call on the cooking time, because oven temperatures can vary. You want the center to be a little gooey, so don’t bake it past that point!
Remove from oven and allow to cool completely. Cut into squares. Just remember that these wonderful cakes are very, very rich, and a little will go a long way…
